Autumn Soup

  • 1 pound ground Beef Top Round
  • 1 cup onions, chopped
  • 4 cups water
  • 1 cup carrots, sliced thick
  • 1 cup celery, diced
  • 1 cup potatoes, peeled and cubed
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1/8 teaspoon basil
  • 6 tomatoes

In large saucepan, cook and stir meat until brown. Drain off fat. Cook and stir onions with meat until onions are tender, about 5 minutes. Stir in remaining ingredients except tomatoes. Heat to boiling. Reduce heat. Cover and simmer for 20 minutes. Add tomatoes. Cover and simmer 10 minutes longer or until vegetables are tender.

Angel Food Strawberry Cake

  • 1 angel food cake
  • 12 ounces whipped topping
  • 1 pint fresh crushed strawberries
  • 1 pint sliced strawberries
  • 1 tablespoon milk

Slice angel food cake into 3 layers. Mix crushed strawberries with tablespoon of milk and 1 1/2 cups of whipped topping. Cover first and second layers with this mixture plus a layer of sliced strawberries. Cover top layer and sides of cake with rest of whipped topping. Garnish with slices or whole strawberries. Store in refrigerator until served.

Sugar may be added to crushed strawberries for sweeter taste. I buy already baked cake from the grocery store. It takes less than 30 minutes to make this delicious and pretty cake. It is very cool and pleasant to the taste.

GI and Cholesterol Friendly Oatmeal

  • 6 tablespoons oats, old-fashioned
  • 2 teaspoons T Oat Bran, do not substitute wheat bran
  • dash salt, dash
  • dash cinnamon
  • lemon peel

Place the above in glass bowl. Just cover with skim milk. Microwave for 8 minutes at 50% power. Sweeten as desired and eat. Good fiber supplement for cholesterol. As desired, you may add: 1/3 cup chopped nuts, 1/3 cup raisins, dates, chopped apple, chopped cranberries or about 1/3 cup pureed fruit like applesauce.

Quick Quiche

  • 1/2 cup Romano cheese
  • 1 cup Bisquick
  • 1/2 cup oil
  • 4 eggs
  • 1 cup zucchini, chopped (or chopped cooked drained spinach)
  • 1 chopped onion
  • 2 tablespoons onion powder
  • 1 teaspoon marjoram
  • 1 tablespoon parsley, chopped
  • 1 cup Swiss cheese, chopped

Mix all ingredients together and put in greased 8" baking dish. Bake in preheated 350° oven until golden brown. Toothpick when inserted will come out clean when done.
